Warming Winter Cocktails From Pine Canyon
It’s been in the 40s and 50s during the day, and it’s been dropping to below freezing at night. We can officially say it’s “chilly” outside. It’s fall. It’s just right.
Beautiful days that slide into crisp fall evenings beckon for the tastes of the season. At Pine Canyon, we’ve unveiled our seasonal cocktail menu and it’s stocked with the comforting hints of apple, pumpkin, pear and spice.
The best part? Those same cocktails can be recreated with ease at your next festive gathering, whether it’s Thanksgiving, a holiday boutique or a simple, fun Friday night.
Salted Caramel Hot Chocolate
Steamed milk, silky caramel, and cocoa are infused with Bailey’s salted caramel and topped with a dollop of whipped cream, more caramel, and a dash of sea salt.
Ingredients: 1.5 oz. Bailey’s Salted Caramel, one teaspoon caramel syrup, and one serving of hot cocoa mix. Fill with about 6 oz. steamed milk and leave room for whipped cream on top. Top whipped cream with a drizzle of caramel and a sprinkle of sea salt.
Sparkling wine mingles with the sweet raspberry flavored Chambord, both touched off by the sweet and tart flavor of hibiscus.
Ingredients: ¾ oz. Chambord over a hibiscus flower, found online or at specialty grocers, topped with champagne.
Warm Apple Pie
The comforting taste of America’s favorite dessert is liquefied with this cocktail featuring caramelized apple rum, sweet honey and tangy cider.
Ingredients: 2 oz. Brown Sugar Apple-infused spiced rum, ½ oz. honey and fill remaining glass with warm apple cider.
Pumpkin Spiced White Russian
Pumpkin takes center stage as it spices vodka and infuses a light cream alongside a coffee liqueur.
Ingredients: 2 oz. Kahlua, 1.5 oz. pumpkin creamer and ¾ oz. vanilla vodka. Top with a dash of pumpkin spice

A crisp yet balanced cocktail, this vibrant bourbon-based drink blends apple whiskey with black cherry, Antica vermouth and orange bitters.
Ingredients: 1.5 oz. Crown Apple Whiskey, 1 oz. black cherry juice/syrup, 1 Amarena Cherry, ½ oz. Carpano Antica Vermouth and a dash of orange bitters.
La Poire Rouge
No seasonal menu would be complete without a dash of nutmeg, which tops a blend of sweet pear-flavored vodka, elderflower liquor, citrus and simple syrup.
Ingredients: 2 oz. Grey Goose La Poire, ¾ oz. St. Germain, ½ oz. simple syrup, pinch of nutmeg and a splash of Sierra Mist or other lemon-lime flavored soda.
